Now I'm officially a graduate of the Texas Culinary Academy.

I'm still trippin out over the fact that I graduated, that I have a fucking degree, that... well I'm not as much of a slacker as I thought I was. I'm finally good at something, I do something I love, and I really do enjoy every minute of my life.

It feels good to be a graduate.

Congrats to all my TCA colleagues for graduating as well. Its a small world, so I'm sure I'll be seeing you in the future.

What's next you ask?

Well another year of school getting my Patisserie and Baking certification. Yes kids, I am going to go off and become a pastry chef. Or at least that's what I'd like to do. I'll run the line if I must, but I'd rather be a pastry geek.

Once this next year is finished, I'm going to make my way to Costa Rica once again and finally set up a life down there. We'll that's still up in the air, but it would be nice if I could make it happen.

Again, I miss surfing, I miss my CC friends back home, and I can't wait til I firmly establish myself in the pastry world. You'll see me on the Food Network Challenge or something and be like "hey, I know that guy!"

Its been a while since I've updated this thing.... a very long while.  Tis sad I use myspace more than my faithful LJ.

Um... recap of Aug 26th - November 26

Costa Rica, Costa Rica, Costa Rica.  2 and half months there. I loved every minute of it. I had epic surf, awesome food, and I made some lasting friends.  AND DID I MENTION THE EPIC SURF?!

I'm being enticed by a resort to come chef at their restaurant (international with local flair)  who knows?.

first i have to make it through P&B back at TCA...

I spent a couple of weeks back home in CC and I was promptly thrown to a local bar getting completely drunk with my best of friends for the majority of that time including a very happy birthday (holy shit, i'm 22! aaah!)

I saw a good friend of mine get married to the girl of his dreams, it was so cute it made me sick.  But I totally looked hot in my suit.

Thanksgiving was a blip on the radar.

I'm in Austin and searching for a job.  Oh joy.

However, I am excited by the fact that I'm goin to Costa Rica in July then back for my extern in August.

I feel like writing. Times like such are rare, but I figured I may as well pen (type?) my thoughts.

I'm sitting here watching Loaded: Green Day on FUSE. Watching some old GD videos got me thinking of music and the memories I associate with them. Like if you hear a certain song, you think of a person, event, occurance, whatever.

So I decided to write a few down for shits and grins to see what I can remember about the songs and memories.

Green Day - the entire Dookie CD - I think of Bobby and goin surfing with that mofo every day during summer in HS, good times.

Jack Johnson - "Better Together" I think of Blayre and our memories over the summer

Authority Zero - "Mexican Radio" I think of Matt and our summer skim sessions, that song seemed to get some serious rotation with us.

Vallejo - "You Are" all the Vallejo shows I went to with Christina, there seemed to be an obnoxious amount of them too.. haha

Tenacious D - "Fuck Her Gently" - the BAD ASS times in Ktown with Weasil, Carl, Joey, and I chillin in front of the library playing music.

Del Castillo - "Vida" - my first impression when Weasil, let me listen to them for the first time and being completely blown away

311 - "Beautiful Disaster" - my awesome surf session down in Costa Rica, it was the last song I listened to before getting the barrel of my life

System of a Down - "Aerials" - one specific surf session with Shoe out at Fish Pass

SOAD - "B.Y.O.B" - damn Sanchez and playing this catchy song to make me think of the beginning of Summer '05

Pink Floyd/Led Zeppelin - anything - makes me think of Mr. Daniel Butler

Scissor Sisters - "Flithy/Gorgeous" - HAH if you dont know why I have this song here... then you shouldn't be wondering! hee hee!
